Italian Green Bean Summer Salad
1 large ripe tomato cut into chunks
1 lb. green beans
1 red onion sliced
2 large white potatoes cut in chunks
1/2 cup olive oil
1/4 cup vinegar (red wine)
Salt and pepper to taste
Prepare green beans and potatoes. Cook to desired tenderness. Let cool.
Then add tomato and onion. Mix with olive oil and vinegar. Salt and pepper to taste.
Serves 4 as a salad
