16 Double Graham Crackers

1 C. Sugar

½ C. Melted Butter

Crush grahams with rolling pin. Mix with sugar and butter. Reserve ¼ cup for topping cake. Press onto bottom and sides of a spring form pan.


2 lb. Plain Dry Cottage Cheese or Ricotta Cheese

4 Eggs well beaten

1 C. Sugar

½ pint Whipped Cream

½ tsp Almond Extract

Mix cheese and sugar, beat eggs well and add to cheese mixture. fold in whipped cream and almond extract. Pour into prepared crust and cover top with the reserved crust mixture. Bake 1 hour at 350~. cool completely before removing side of spring form pan
