AMARETTO MOUSSE CHEESECAKE

Crust

1 Box Graham Cracker Crumbs

Follow instructions on box. Use 2 crust recipe rather than entire box. Press into bottom and sides of a spring form pan

Filling

1 Envelope Knox Unflavored Gelatin

½ C. Cold Water

3 pkg Cream Cheese

1¼ C. Sugar

5 oz. Evaporated Milk

1 tsp.. Lemon Juice

1/3 C. amaretto

1 tsp. Vanilla

¾ C. Whipping Cream Whipped

Sprinkle gelatin over cold water, stir over low heat until dissolved. Set aside.

Beat cream cheese, and sugar 2 minutes until fluffy. Gradually add milk and juice. Beat on medium high 2 minutes until fluffy. Gradually add to gelatin mixture and beat in amaretto and vanilla. Fold in using a wire whip whipped cream (measured after whipping). Pour mixture into cooled pre-baked crust. Refrigerate 8 hours or over night.. Before serving, place well drained Maraschino Cherries all around the circumference (one per portion) and drizzle with ¼ cup Hershey's Chocolate Syrup over all in swirly lines
